Mother’s day brunch inspiration: waffles
Indulge mum this Mother’s Day with our delicious waffle recipe! After all she does for us, she deserves a yummy breakfast in bed. Simply follow our detailed instructions and in a mere 25 minutes, you’ll have waffles you’ll be dreaming about for days to come. Enjoy!
Makes: 5 to 6 Waffles
1 cup / 120g all-purpose flour
1 tablespoon granulated white sugar
2 teaspoons baking powder
1/4 teaspoon fine grain sea salt
1 cup /milk
1/4 cup sunflower oil, plus more for greasing
1/2 teaspoon vanilla extract
Step 1 – Buy or procure a waffle maker
Step 2 – Preheat the waffle maker according to the manufacturer’s instructions.
Step 3 – In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
Step 4 – In another mixing bowl, gently whisk together the milk, oil, egg, and vanilla until smooth and combine. Pour the egg mixture into the flour mixture and stir together with a wooden spoon or silicone spatula, until combined. The mixture will appear thick and lumpy, this is normal; don’t over-mix the batter.
Step 5 – Once the waffle maker has preheated, using a pastry brush, coat the inside (top and bottom) of the maker with oil. Pour enough batter into the waffle maker to just cover the waffle grid. Close the waffle maker and cook the waffle as per the manufacturer’s instructions, about 3-5 minutes, until golden brown. To prevent the waffles from getting soggy, toss them— one at a time— back and forth between your hands a few times to help release any steam. Continue on with the rest of the batter until done.
Step 6 – Serve right away with butter and maple syrup, berries, figs and a little scoop of ice cream.
